Lucknowi Subz Bun Kebab

Vegetable mince kebab served on fermented bread

Ingredients     

For Kebab                                                

200gms Minced vegetables (Cauliflower, beans, carrot, crushed peas, broccoli)

75gms Grated boiled potatoes

25gms Grated paneer

5gms Chopped green chilly

2gms Chopped ginger    

10gms Chopped fresh coriander

5gms Garam masala powder

10gms White butter (Soft)

2gms Shahi jeera

2gms Turmeric

Ghee for frying  

20gms Toasted cashew nut, almond & pistachio slivers                                               

Salt to taste         

Local street bun

For Salad 

1nos Onion slices (Little thick)

1gms Kashmiri chili powder

2gms Chopped mint

Black salt to taste

(Mix all the salad ingredients just before service)

For Garnish                                                

Chilly yoghurt

Chives or thin spring onion green

Method

In a pan, heat some ghee, add shahi jeera, and crackle it. Add all minced vegetables, chopped green chili, ginger, turmeric, and salt. Cook on a medium flame till the vegetables are cooked well.

Keep it aside in a tray and allow the mixture to cool down.

Add grated potatoes, paneer, chopped coriander, garam masala powder, soft white butter, and toasted nuts, and mix well. Rub it gently for 10-15 minutes.

On a medium flame, heat ghee on a tawa.

Take the kebab mixture, roll it into equal size balls, and tap each ball in your palm and give it a round cutlet shape.

Tawa-fry on medium heat till the kebab becomes crisp.

Slit the bun and toast it on the tawa.

Place the onion salad on the bun. Place the cooked kebab on it.

Garnish it with chili yoghurt & chives.

Note:

You can make the kebab with any vegetables or with soya chunks.

The kebab can be stuffed with khoya, dry fruits, and nuts.
